freezer burritos

I made some burritos for our freezer, and now I feel like the most prepared person in the world. All ready for lunches. Just add some avocado.

Underneath that foil (or in that plastic bag after I ran out of foil), is:

  • A burrito sized tortilla
  • Refried beans
  • Some cheese
  • Some of that frozen southwestern corn with the pepper and onion bits in it
  • And some salsa mixed with plain greek yogurt

So now you can feel like the most lunch-ready person in the world too! Does anyone know if lettuce freezes well?

I’ve only lived here for a handful of years, but I feel like this winter is colder than usual. I hardly ever remember walking around campus for more than a day or so when it was really cold. I don’t mind the chilly season at all, but our house is on the cold-blooded side. If its hot, its hot. If its cold, its cold. So we’ve been layering on blankets and our winter clothes. This would be a pretty blanket to add to our collection, and this is a cozy winter hat to keep our ears warms.

The majority of the weekend was spent finishing a large order, but we still managed to have one of those simple, wonderful weekends. It was rainy, grey, and almost freezing- so perfect movie watching weather. Not too many pictures, but lots of time together. One of my favorite parts of the weekend was our gym and bagel date.

a new resolution

Most of our resolutions are the normal boring things, like drink enough water, eat our vegetables- the normal good habits. One of my not quite as boring resolutions this year is to keep a journal. Last year, I used a little calendar as a journal. I would just make some short notes of what I worked on that day, anything we did together. Just a couple words to fit in the calendar date box. But this year I am giving myself a little more room with a big girl journal. Lots of blank space for words and pictures, and maybe even some photos.

french toast for dinner

I’ve been wanting to try a cloche bread baker, and lucky me, I happened to get one for Christmas! I tried it out on New Years Eve, and it tasted great, except I didn’t oil and cornmeal the bottom enough. So the crusty bottom stuck to the baker. Never ones to be defeated by kitchen gadgets, we decided to make french toast out of hacked up bread, as the saying goes.

winter garden update

I spent most of my time this week finishing up my last orders, and organizing all the Christmas presents. Not much time on the internet this week (although this video is amazing). But do you know where I do spend my free daytime? Our garden.

We had a little caterpillar issue. I think we caught it early enough, and now all the plants seem to be really growing. Those little buggers though. They wake up, and just go to town chomping on plants.

We made our garden beds straight into the ground this season, so its been a constant fight to keep the weeds and fallen leaves from interfering with our growing salads.

But our hard work is definitely paying off! We had some fresh rainbow chard this week, chives on our baked potatoes, and arugula with our scrambled eggs.

almost christmas vacation

Can you believe its almost a week until Christmas? We’ve been in a holiday spirit for several weeks here, with lots of hot chocolate and candy canes, Christmas cartoons, shopping, friend dates, and breakfasts for dinner. I am very excited to do all those things with family soon.
