I made some extra cookie dough for the freezer today. I pre-scooped them into cookies so they are ready to go. We sometimes have trouble with frozen cookie dough staying really gooey in the middle, so I tried flattening them a bit, to see if that helps them bake better. We’ll see if it works next time we have a cookie emergency!

eat cookies for breakfast
Its almost the weekend, which is a good excuse to eat cookies for breakfast! There are a lot of “breakfast cookie” recipes popping up, so they might be worth a try!
easy oatmeal waffles for two
We love making waffles on the weekend. Jon almost always puts butter and syrup on his, but this time we made a ton of fruit to go on top.
I like making extra waffles, but since there are just two of us, I usually make smaller batches. Here is a quick recipe for some yummy oatmeal waffles.
Mix together:
- 1 cup Bisquick
- 1/2 cup oatmeal
- 1 egg
- 1 cup milk
- 3 Tbs melted butter
- Bit of cinnamon
Pour into waffle maker and cook until ready! We made 4 waffles on our waffle maker. Enjoy!
back to sourdough bread
I ended up taking a little hiatus from making sourdough bread. I’ve been working on feeding my starter to make it happy again. This is my first successful little loaf in a while, and it was sooo good. We tried this recipe, which was enough resting and rising time to give a good sourdough taste, but it was low maintenance enough that we didn’t need to check on it all day.

strawberry ice cream
We made strawberry ice cream to celebrate the first day of summer. And the first day of summer rewarded us by raining again. So we enjoyed our ice cream cones inside on the couch watching a movie. At least it tasted like summertime.
pickle season
We have sooo many cucumbers. They are one of the only veggies in the garden not complaining about all these flooding rains. Just keep growing is their motto. I picked a big batch of pickling cucumbers last week, so now we have a couple jars of sweet pickles, to eat with our sandwiches or as snacks. We made some of Jon’s favorite pulled pork in the crock pot, and ate it on sandwiches with bbq sauce, and lots of these pickles!

Are these not the most adorable cookies you have ever seen? I took a picture of these before they went in the oven just in case something terrible happened in there, but thank goodness, they came out looking just as good. And they are even fully edible! Although I don’t know how you could eat one, instead of just filling your pockets with them.

There is always such drama when baking a new recipe. Is the bottom getting too done? Is the top done enough? Are they going to dry out if I leave them in longer? Luckily, this drama had a happy ending. I used this recipe, except I added mini chocolate chips instead, for cuteness.
