We made a version of this pie recently. We made a cookie crust instead, and used half lemon juice and half lime juice. It was a quick, sweet, bright summer treat. You definitely don’t want to skip the whip cream on top!

basil lemon water
We planted a whole bunch of basil this spring. We read that bugs tend to not like the smell of it, or maybe the strong smell just confuses them. The smell mostly makes me hungry, so those bugs are really missing out. We have basil growing in a box on the back porch, some in the herb garden in the front yard, and some in containers near the vegetable garden. So now, we have a list of basil recipes to try for the next couple months.
One of the new recipes we tried was simple lemon and basil infused water. We cut up some lemon slices and added some basil leaves to ice water for a nice, refreshing drink. Pretty to look at, too.
lemon poppyseed muffins
I am on an ongoing journey to find a muffin recipe that makes those big muffins with the big fat tops on them. I read somewhere that the secret was using yogurt, or something like that to give your muffin some oomph when its baking. I used a recipe similar to this, and added some lemon zest and poppy seeds.
One of the best parts of making muffins or cupcakes is putting the little cupcake liners in the pan. Instantly makes me feel like I am in the kitchen with my ma.
This batter is super thick. I imagine you could maybe put it in a loaf pan and make bread too.
The recipe said it makes 12 muffins. I checked multiple times. So I made only 12 (overflowing) muffins.
I skipped a glaze on top, since its mostly sugar, and we are trying to be a little healthy here.
And here is the huge muffin! Perfect for our Sunday brunch. I don’t think it is my perfect muffin recipe yet, but by george, it sure has a glorious top on it.
